Need a quick lunch that tastes as good as it looks? We've got you. This spicy pork stir fry is made with udon noodles, sweet Honey Sriracha Drizzle, and only takes 15 minutes to cook and prep.

Ingredients

1 tbsp oil (vegetable or sesame)

2 cloves garlic, finely chopped

1 red chilli (or to taste), finely sliced

250g pork mince

1 small carrot, shredded

2 spring onions, sliced (plus extra for garnish)

2 packs udon noodles

2 tbsp soy sauce
-
½ lime, juiced (plus extra wedges for serving)

Fresh coriander, chopped (for garnish)

½ tsp nigella seeds (for garnish)

1 tbsp Honey Sriracha Drizzle (plus extra for garnish)
Directions
Heat a little oil in a pan over high heat, then sauté the chopped garlic, ginger, and chillies until fragrant.
Add the pork mince and cook until browned, breaking it apart as it cooks. Stir in the shredded carrot and spring onion, letting them soften slightly.
Toss in the udon noodles and stir until everything is evenly combined and warmed through.
In a small bowl, mix together the soy sauce, Honey Sriracha Drizzle, and the juice of half a lime, then pour over the stir-fry, coating everything in the spicy sauce.
Let it cook for another minute or two, ensuring the flavours meld together.
Transfer to a bowl and finish with a fresh squeeze of lime, an extra drizzle of Honey Sriracha, and a sprinkle of coriander, spring onions, and nigella seeds.
