Had to jump on the baked potato hype and bring you guys this BBQ pulled pork loaded baked potato. Take the perfect baked potato, and top it with Original BBQ Sauce covered pulled pork, cheese, chives, and crispy onions. Delicious.

Ingredients
- 4 large Maris Piper or King Edward potatoes
- 1 tbsp olive oil
- 1 tsp sea salt

500g slow cooked pulled pork

100g grated mature cheddar

2 tbsp crispy fried onions

1 tbsp chopped fresh chives

Original BBQ Sauce
Directions
Cook the baked potatoes
Preheat oven to 200°C (180°C fan).
Scrub the potatoes, prick them with a fork, rub with olive oil and salt.
Place directly on the oven rack and bake for 1 hour, or until crispy outside and fluffy inside.
Cook the BBQ pulled pork
In a roasting dish, place pork shoulder and cover with foil. Cook per package instructions.
Once cooked, completely cover in Original BBQ Sauce, and mix until sauce has coated all of the pork. Cook for a further 5 minutes.
Assemble & serve
Slice open the baked potatoes and fluff up the inside with a fork.
Pile on the BBQ pulled pork, sprinkle over cheese, then top with crispy onions and chopped chives.
Drizzle with extra BBQ sauce for good measure.
