Your mac and cheese game just completely levelled up 🔥 Crunchy on the outside but gooey in the centre, these buffalo mac and cheese bites are the perfect spicy snack for when you’re next feeling peckish.

Ingredients

200g macaroni pasta
- 2 tbsp butter
- 2 tbsp plain flour
- 300ml whole milk
- 150g sharp cheddar, grated
- Salt & pepper to taste
- 100g plain flour
- 2 eggs, beaten
- 150g panko breadcrumbs

2 tbsp Buffalo Hot Sauce
Directions
Cook pasta according to the packet. In a pan, melt butter, stir in flour, and cook for 1 min. Gradually whisk in milk to make a smooth sauce. Add cheese, stir till melted, then stir in Buffalo Hot Sauce. Mix in the pasta. Season to taste.
- Spread mac & cheese into a lined tray, flatten it out, and let it chill in the fridge for at least 1–2 hours (or freezer for 30–45 mins). You want it firm enough to shape.
- Scoop and roll into bite-sized balls or nuggets. (Think golf ball size.) If it gets messy, keep your hands slightly damp or oiled.
Coat each bite in flour, dip in egg and roll in breadcrumbs. For extra crunch, double-dip in egg and breadcrumbs again.
- Heat oil to 175°C (350°F). Fry in batches for 2–3 mins until golden and crispy. Drain on kitchen paper.
Enjoy straight away so the mac and cheese is still gooey.
