Mini Ranchero Chicken Fajitas

Ingredients

1 jar Ranchero Cook-In Sauce
-
3 mini tortilla wraps per person

1 tbsp Olive oil

Salt and cracked black pepper

1 red onion, cut into 1/8ths

1 red pepper, chopped lengthways
-
1 yellow pepper, chopped lengthways

4 large chicken breasts, diced
-
150ml soured cream
-
100g grated cheddar cheese
-
2 spring onions, chopped
Directions
Heat oil in a frying pan on a medium heat
Fry chicken breast until cooked through and golden - season with salt and pepper, remove from the pan and place in a bowl
Add onion and peppers to a little more oil and fry on a medium/high heat until they are well cooked and starting to turn brown
Add the cooked chicken and the jar of Ranchero Cook-In Sauce into the pan. Simmer until the sauce is heated through (6-8 mins)
Place your tortillas flat on a serving board or plates
Fill tortillas with the spicy chicken and pepper mixture, topping with grated cheese, soured cream and spring onion.
