Chorizo Gnocchi Bake

The most wholesome, warming and simple gnocchi bake you could make. Handful of ingredients and cooked for no more than 15 minutes. We've used our Mother Tomato Cook-In Sauce for this one.

Ingredients

1 jar Mother Tomato Cook-In Sauce

150g cooking chorizo (diced)

500g fresh gnocchi

1 x mozzarella ball (torn into chunks)

100g grated cheddar

Fresh basil and extra virgin olive oil to garnish
Directions
Add oil to a large pan. Fry the diced chroizo on a medium heat until the edges start to go brown and oil is bronze
Pour in the Mother Tomato Cook-In Sauce (add some water to the jar and swill, then add to the pan)
Add gnocchi and cook it all for around 6-8 minutes until the gnocchi begins to soften
Transfer the gnocchi and sauce mixture to a large oven proof dish
Top with torn mozzarella and grated cheddar and grill for 5 mins until the cheese is bubbling
Garnish with fresh basil and drizzle of extra virgin olive oil
