This veggie kebab is the first in our 2021 recipe collab with Chef James Cochran - 2018 Great British Menu winner and owner of London restaurant, 12:51.

Ingredients

Sriracha Chilli Sauce

2 pitta breads.

1/2 onion.

1 garlic clove.

2 tbsp white wine vinegar.

1/2 bunch parsley.

Sea salt.

4 king oyster mushrooms.

3 tbsp yoghurt.

4 pickled sweet red pepper.
Directions
Slice the onion then add in a couple of tablespoons of white wine vinegar and a good sprinkle of sea salt.
Finely chop up your parsley.
Slice your mushrooms and grate 1 garlic clove.
Chop up the pickled red pepper.
Add a sprinkle of sea salt to the yoghurt.
Fry your mushrooms, grated garlic and parsley in a hot oiled frying pan for 3-4 minutes (don’t forget to check out our famous mushroom ketchup).
Throw everything into your sliced pitta's with a dollop of Sriracha Chilli Sauce.
