Hot Honey Halloumi and Sweetcorn Bites

Stupidly moreish, incredibly cheesy, and with just the right amount of spice. These Halloumi and Sweetcorn Bites are smothered in Honey Sriracha Drizzle, making them an absolute must-try this festive season.

Ingredients

60ml extra virgin olive oil

225g block halloumi cheese, grated

200g sweetcorn, drained

2 eggs
-
40g self-raising flour

Coriander, chopped

Parmesan, to taste

Salt & pepper, to season

Honey Sriracha Drizzle
Directions
Set your oven to 200°C and preheat. Add 1/2 teaspoon of oil to each section of a 24-cup muffin tray, then place the tray in the oven for 5 minutes to warm up.
In a mixing bowl, combine shredded halloumi, sweetcorn, two eggs, flour, Parmesan, salt, pepper and chopped coriander. Stir the mixture until everything is evenly mixed.
Spoon the mixture into the preheated muffin tray, dividing it equally between the sections. These will be your bites.
Bake for 20 minutes or until golden brown and bites stay together.
Let them cool slightly before removing from the tray and transferring to a plate.
Smother with Honey Sriracha Drizzle and top with chopped coriander.
