A normal bánh mì recipe is good, but make it a Chicken Teriyaki Bánh Mì recipe, and you’re onto a right winner. So that’s exactly what we've done. Featuring our Miso Teriyaki BBQ Sauce (now available in Sainsburys), this is a 20 minute lunch you won't want to miss out on.

Ingredients

½ Red onion

½ Cucumber

2 Carrots

White wine vinegar (enough to fill 1 ½ jars)

3 tablespoons sugar

3 tablespoon salt

3 chicken thigh fillets
-
Crusty white rolls
-
2 tablespoons pâté (whichever you fancy)

Coriander, small handful

Sauce Shop Miso Teriyaki BBQ Sauce (available in Sainsbury’s)
Directions
Pickle your veg
Chop your red onion, carrots, and cucumber into thin slices.
Add equal parts white wine vinegar and water to a jar, before adding in salt and sugar.
Place your chopped veg into the jars and leave to pickle for at least 30 mins.
Make your chicken
Chuck 3 chicken thigh fillets into a bowl before marinating in our Miso Teriyaki BBQ Sauce, the longer the better.
Pour a little bit of oil into a frying pan before heating over medium heat.
Fry your chicken for about 8-10 mins, until the internal temperature has hit at least 73.9 °C.
Give it all a chop
Put your chicken, pickled veg, even more Miso Teriyaki BBQ Sauce, and a bit of coriander onto a chopping board.
Give it all a good chop with a large knife until you’re happy with how small the chunks are, you’re the one eating it after all.
Assemble the bánh mì
Get a proper crispy white roll and slice it in half.
Cover one side with whatever pâté you fancy, we don’t judge.
Scoop your chicken and veg mix onto the roll, making sure to get a bit of everything in there.
