This should be your go-to post lockdown barbecue recipe. A guaranteed winner with the entire family and only using a few ingredients. We cooked on a coal barbecue for this recipe.
Ingredients
-
Pack of 6 chicken thighs.
-
Original BBQ Sauce.
-
Original BBQ Rub.
-
OR Smoky Chipotle BBQ Rub.
-
Salt.
Directions
First off, get your barbecue nice and hot. It might need anywhere between 10-20 minutes to properly heat up.
Add your chicken thighs to a bowl and sprinkle over some salt. Mix this all together and then coat in a generous amount of our BBQ Rubs - make sure all your thighs have a light covering.
Add these to the barbecue when it's hot enough. Keep turning frequently, flipping them over every few minutes to ensure you're cooking each side and that they aren't burning on one side.
This is where it'll be useful to have hotter and colder areas of the barbecue. Have some areas with bunched up coal and other areas with less. While cooking, move your thighs around the barbecue.
Keep using your temperature probe to check the internal temperature. You're looking for around 75C.
Once they get this hot, pour Original BBQ Sauce onto each thigh and rub it in with a brush to evenly apply it. Turn your thighs over and repeat that process. This will be your glaze.
After around 5-minutes, the thighs should have a crispy coating with a super flavoursome covering of BBQ Sauce.
Recipe Note
We ended up cooking the thighs for around 30 minutes in total but they could take less or more time depending on your barbecue. The most important thing is checking the internal temperature and ensuring you've got a crispy coating.
