- 340g penne pasta
- Pinch of salt for boiling water
- Good glug of olive oil
- 1 white onion, finely chopped
- 200g Spicy chorizo, casing removed and chopped into small pieces
- Mozzarella cheese, shredded
- Cheddar cheese, grated
- Fresh basil, chopped (for garnish, optional)

Spicy Marinara Simmer-Sauce
- Garlic bread, to serve (optional)
Directions
Cook the penne pasta in a large pot of salted boiling water according to packet instructions until al dente. Drain and set aside.
In a large frying pan, heat olive oil over medium heat. Add chopped onion and sauté until softened, for a few minutes. Add chopped chorizo and cook until the edges are slightly browned, around 5-6 minutes.
Stir in the Spicy Marinara Simmer-Sauce and mix until all ingredients are combined.
Add the cooked pasta to the spicy chorizo sauce, tossing until the pasta is well-coated.
Transfer the pasta and sauce mixture to a baking dish. Sprinkle shredded mozzarella and grated cheddar cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly, and the edges are golden brown.
Remove from the oven, garnish with fresh basil, and let it cool for a few minutes before serving.
