Looking to level up your lunch? This spicy salmon sandwich is the perfect place to start! With a cream cheese salmon filling and a dollop of our Scotch Bonnet Chilli Jam, this is a recipe you're sure to fall in love with from the very first bite.
Ingredients
- 500g salmon
- 1 tub cream cheese
- 1 bunch dill
-
1 bunch chives
- 1 lemon
- 1 Focaccia loaf
- Pickled cucumber
- Pickled onion
- Shredded lettuce
-
Scotch Bonnet Chilli Jam
Directions
Bake your salmon:
Start by baking your salmon in the oven. Lightly brush with oil and bake for 10-15 minutes at 180 degrees until easily flaked with a fork.
Make your filling:
Finely chop your dill and chives before placing them into a bowl with cream cheese, lemon, and a tablespoon of the Scotch Bonnet Chilli Jam.
Now put all of the salmon into the bowl and mix until the salmon has flaked, and the filling is fully combined.
Lastly, finely chop your lettuce.
Assemble the sandwich:
Cut your focaccia loaf in half, and smother one side with more Scotch Bonnet Chilli Jam.
Next, cover an entire side with the salmon and cream cheese mixture, before topping with your pickled cucumber, onion and shredded lettuce. (If you need help pickling your veg, here’s a great tutorial)
Place the other half of the focaccia on the sandwich, and serve with some chips for the perfect lunch.
