Courgette (Zucchini) Fries with Hot Sauce

Do yourself a favour and add these courgette fries to your weekly snack rotation. Light, crispy, and with just the right amount of spice from Original Hot Sauce.
Ingredients

2 courgettes cut into fries

100g plain flour

100g cornflour

200ml sparkling water

Salt, to taste

Vegetable oil, to fry

Fresh coriander, chopped

2tsp Original Hot Sauce

Chipotle and Lime Aioli, for dipping
Directions
- Firstly, heat your oil to at least 180°C. Cooler oil can result in soggy fries with a limp batter, so use a thermometer if needed.
- Slice your courgettes into chip-sized sticks before making the batter. You'll want them ready to go as soon as the batter is mixed.
In a mixing bowl, combine the plain flour, cornflour, a pinch of salt, and Original Hot Sauce.
- Gradually add chilled sparkling water and whisk until the batter is smooth and lump-free. If your sparkling water isn’t cold enough, put it in the freezer until ready to add to the batter.
- Dip a few courgette pieces into the batter, then carefully place them into the hot oil. Fry in small batches to prevent overcrowding.
Fry each batch for 3-4 minutes until the batter is crispy and puffed.
Remove the fries from the oil and put on a plate lined with paper towels to drain any excess oil. Finish by sprinkling with freshly chopped coriander.
Dip your crispy fries in Chipotle and Lime Aioli and eat whilst warm.
