One of our favourite lunch sandwich recipes... Jerk Fried Chicken Sandwich cooked up by 2018 Great British Menu winner, Chef James Cochran. We worked with James a few years ago on a series of recipes using our sauces. You'll need Habanero Hot Sauce for this one. Enjoy!

Ingredients

2 boneless chicken thighs.

Plain flour - enough to coat the chicken.

Sauce Shop Habanero Hot Sauce.

1 medium bowl of plain yoghurt, enough to coat the chicken.

1 tbsp jerk spice/seasoning.

Salad of your choice - James went for lettuce, cucumber, red chillies and red onion.

2 slices of white bread.

Sauce Shop Original Mayo
Directions
Mix the jerk spice with your yoghurt and a pinch of salt. Add the chicken to that bowl and mix. Leave this for 4 hours.
Take the chicken out and roll around in the flour.
Prepare your salad, thinly slicing everything so it's ready for your sandwich. Best to go with your judgement here on how much salad you want in your sandwich.
Spread the mayo across the bread.
Deep fry your chicken for 6-8 minutes at 170C until the chicken is fully cooked. It should be golden brown on the outside.
Stack your sandwich up - start with your salad, chicken and finish with some Habanero Hot Sauce. You could replace with Original Hot Sauce or Sriracha if you're wanting something a little less spicy!
