Beef enchiladas with Ranchero Cook-In Sauce

Mexican inspired beef enchiladas made with Ranchero Cook-In Sauce, topped with grilled cheese and Sauce Shop Sriracha.

Ingredients

1 jar Ranchero Cook-In Sauce

500g beef mince

Sauce Shop Sriracha

200g grated cheese

8 soft tortillas

1 onion, chopped
Directions
Heat a well oiled large skillet to a medium heat. In preparation for later, pre-heat your oven to 200C.
Add in your chopped onion and fry until softened, around 4 minutes.
Turn the stove up to a higher heat and add your beef mince to the onions. Cook for around 5 minutes, breaking up and turning the beef mince to ensure it browns.
Once the mince is browned, mix in the jar of Ranchero Cook-In Sauce and heat through, for around 3 minutes.
Lay out your tortillas on a flat surface, spooning in some of the mixture on one side of each tortilla. Roll them into tubes and lay them in a deep sided baking tray.
Once in the tray, cover the filled tortillas with Sriracha and grated cheese. Bake for 8-10 minutes in the oven until the cheese is melted and the tortillas have started to turn a little bit golden.
You can top with more sriracha hot chill sauce, avocado, yoghurt and jalapenos (optional stage).
