It’s porky, it’s prawny, and it’s got a kick of chilli jam! This incredible burger was made from scratch by chef James Cochran himself, and now we’re showing you how to make it too. Featuring our Scotch Bonnet Chilli Jam (also available in Sainsbury's and Asda), this burger is definitely something you'll want to write home about.

Scotch Bonnet Chilli Jam
- 500g pork mince
- 250g tiger prawns, peeled and chopped
- 4 spring onions, finely chopped
- 2 cloves garlic
- 2 fresh chillies, seeds removed
- 1-inch piece of ginger, peeled
- 2 egg whites
- 1 tablespoon caster sugar
- 1 tablespoon sesame seeds
- 1/2 cucumber, thinly sliced
- 1 small red onion, thinly sliced
- 1 tablespoon sesame seeds
- 1/2 cup white wine vinegar
- 2 teaspoons mustard seeds
- 2 tablespoons caster sugar
- 4 brioche buns
- 8 slices of crispy bacon
- Shredded lettuce
- Crispy onions (for garnish)
- Olive oil (for cooking)
Directions
Prep the Burger Mixture:
In a blender, combine garlic, fresh chillies, ginger, egg whites, and caster sugar. Blend until smooth.
Pour the blended mixture into a bowl with chopped spring onions.
Add pork mince, chopped tiger prawns, and sesame seeds to the bowl.
Mix all the ingredients until well combined.
Place the mixture in the fridge for 10 minutes to firm up.
Prepare the Pickled Vegetables:
- In a saucepan, combine white wine vinegar, mustard seeds, and caster sugar.
- Bring the mixture to a boil, then remove from heat and allow to cool slightly.
- Place sliced cucumber and red onion in a bowl, add sesame seeds, and pour the vinegar mixture over the vegetables. Stir to coat.
- Set aside to pickle while you prepare the rest of the ingredients.
Cook the Burger Patties:
- Heat olive oil in a skillet over medium heat.
- Form the pork and prawn mixture into burger patties.
- Cook the patties in the skillet until golden brown on both sides and cooked through, about 3-4 minutes per side.
- Transfer the patties to a baking sheet and bake in a preheated oven at 350°F (175°C) for an additional 10-15 minutes to ensure they're fully cooked.
Assemble the Burgers:
Slice the brioche buns in half and spread Scotch Bonnet Chilli Jam on the bottom half of each bun.
- Layer crispy bacon, shredded lettuce, and a cooked burger patty on top.
- Spoon some of the pickled vegetables over the burger patty.
- Sprinkle crispy onions over the pickled vegetables.
- Place the top half of the bun on top to complete the burger.
- Serve and Enjoy!
