These are extra crispy fried pickles, or frickles. They're one of our favourite snacks and they're also really easy to make. We coated these frickles in panko breadcrumbs, and served them with our Chipotle and Lime Aioli.

Ingredients
-
8 whole pickles (chopped in half)
-
Salt
-
Pepper
-
Panko breadcrumbs (enough to coat)
-
Plain flour (enough to coat)
-
Paprika
-
Garlic powder
-
Sunflower oil
-
2 eggs
-
Chipotle and Lime Aioli
Directions
Chop your pickles in half. Get rid of the moisture by drying them with kitchen paper.
Add flour to a bowl and season it with paprika, garlic powder, salt and pepper. The amounts are totally up to you and depends on how many frickles you’re making. Coat those pickles!
Lightly beat your eggs in a bowl and then dredge the flour coated pickles through it.
Coat in panko breadcrumbs. The more coated they are, the more crispy the frickles will be. Go for it.
Heat your oil to around 180C and carefully add your pickles. You may need to do them in batches. Fry them for a few minutes until golden brown. 3 minutes should do the job.
Add them to a plate lined with kitchen paper to catch some of the oil.
Sprinkle with sea salt and use Chipotle and Lime Aioli as a dip! You could also use our Ranch Mayo if you prefer a herby dipping sauce.
Recipe Note
The recipe is a snack, and will serve 2 people. Scale everything up depending on how many you want to feed. With the flour and panko breadcrumbs, you just need enough to coat the pickles, so use what quantities you see fit.
